Pasta Salad

  Pasta Salad 1 box spiral pasta Cucumber Tomato Green onion Can of olives Dry Italian dressing mix Italian dressing Cook pasta as instructed on package until it is just barely done.  Cool with cold water.  Combine remaining ingredients in a large bowl. Serve chilled.

Maine Potato Salad

  Maine Potato Salad From Anne Lovell Dressing: 4 T. olive oil 3 T. vinegar 2 tsp. salt 1/2 t. black pepper Pinch of red pepper 1 tsp. dry mustard 2 T. chopped parsley 2 T. minced onion (I like to use green onion) Cook potatoes, drain and cool enough to handle. Dice potatoes and pour dressing over them while warm Refrigerate. Add a small amount( 1/4 c.) of mayonnaise to taste if you would like. Make a bed of lettuce serving platter and mound salad on top. Enjoy.

  Yummy chicken Enchiladas GayLenn & LeAnn 2 to 3 boneless, skinless chicken breasts, cooked and shredded or cubed can cream of chicken soup 1 cup or so sour cream 2 cups grated cheddar cheese, divided small can green chilis 10 flour tortillas • Combine soup, sour cream and chilis. Stir in chicken and I cup of cheese, after reserving 1/2 cup of mixture. • Fill the tortillas with about 1/4 cup mixture and roll up placing seam-side down in casserole dish. •Pour over reserved sauce and any extra; sprinkle with remaining cheese •Bake in 350° oven until bubbly, about 20 to 30 minutes. Serve with green salad.

  YORKSHIRE PUDDING 8 medium eggs  (6 large) 1 c flour 1 c milk salt 3-4 T vegetable oil, oil sides Put pan with oil into a 450° oven.  Pour batter into the 9x13 pan when the oil is super hot.  Bake for 20 minutes until brown and bubbly.

Quick Pizza Dough

  Quick Pizza dough 2 C. warm water 1 T yeast 2 tsp salt 4 T sugar 4 T Oil 4 or 5 cups white/wheat flour (until dough comes away from bowl) 1. Pour water into kitchen aid mixing bowl. 2. Sprinkle yeast over water 3. Stir until yeast dissolves. Add salt, sugar, & oil. 4. Stir in 2 c flour. Blend well. 5. Stir in more flour to make dough stiffer than bread dough. 6. Knead until dough is not sticky. 7. Roll out to fit two pizza pans that have been coated with shortening & dusted with flour. 8. Cover with toppings. 9. Bake 20 minutes at 425 degrees or until crust is golden brown and cheese is bubbly. With the pizza, I usually put the sauce and toppings on it, cook it for 12 minutes and THEN add the cheese for the remaining 8 minutes. I do put a little bit of cheese on after the sauce (to help "glue" the toppings), but the majority goes on after the 12 minute mark. I've found that the cheese cooks faster than the dough does and it will come out nearly perfect by doing ...

  Scones and cinnamon roll dough 3 cups hot water ½ cup shortening 1 Tbs salt 2 Tbs yeast 2 tsp baking powder 1/2 c. sugar Flour until it comes neatly away from sides of bowl. Knead 8-10 minutes Roll out and fry (Half recipe for just the family)

Blueberry Oatmeal Muffins

  Blueberry Oatmeal Muffins (makes 12) 1-1/4 cups all-purpose flour 1 cup quick-cooking oats 1/2 cup packed brown sugar 2 teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 1/4 teaspoon baking soda 1/4 teaspoon ground nutmeg 1 egg, lightly beaten 1 cup (8 ounces) plain yogurt 1/4 cup butter, melted 1 cup fresh blueberries In a large bowl, combine the first eight ingredients. Combine the egg, yogurt and butter, stir into dry ingredients just until moistened. Fold in blueberries. Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter.  Bake at 400° for 18-22 minutes or until a toothpick inserted near the center comes clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

Spanish Fork French Toast

  1-2 loaves bread 2 eggs 1/4 cup butter, melted 1 1/2 cups milk 1 Tbsp. vanilla 1/4 cup sugar 2/3 cup flour 1/2 tsp. salt butter for pan 1. Whisk together the wet ingredients. 2. Whisk in the dry ingredients. 3. Preheat your skillet to medium. Add 1 Tbsp. butter and melt. 4. Dip bread in the mixture. May let sit for 30 seconds if want. 5. Place dipped bread in skillet and cook on each side until golden brown. 6. Serve warm with jam, syrup, powdered sugar, etc. 7. Enjoy!

Sausage & Green Chili Quiche

  Sausage & Green Chili Quiche (makes 2) Add HAM AND CHEESE QUICHE Ingredients: Two deep dish pie crusts, unbaked 2 cans diced green chilies 1 roll sausage, cooked and crumbled 8 eggs 4 c. cream (You can use Fat Free half & half and it bakes well) 1c. Shredded cheese Dash of Salt & pepper Directions: Preheat oven to 350 degrees. Drain chilies and spread one can in the bottom of each crust. Top with sausage and cheeses. In a medium bowl, combine eggs, cream, salt & pepper. Pour into pie crusts. Place pie pans on baking sheet and bake at 350 for 40-60 minutes until top is browned and knife comes out clean.
