Quick Pizza Dough

 

Quick Pizza dough


2 C. warm water

1 T yeast

2 tsp salt

4 T sugar

4 T Oil

4 or 5 cups white/wheat flour (until dough comes away from bowl)


1. Pour water into kitchen aid mixing bowl.

2. Sprinkle yeast over water

3. Stir until yeast dissolves. Add salt, sugar, & oil.

4. Stir in 2 c flour. Blend well.

5. Stir in more flour to make dough stiffer than bread dough.

6. Knead until dough is not sticky.

7. Roll out to fit two pizza pans that have been coated with shortening & dusted with flour.

8. Cover with toppings.

9. Bake 20 minutes at 425 degrees or until crust is golden brown and cheese is bubbly.


With the pizza, I usually put the sauce and toppings on it, cook it for 12 minutes and THEN add the cheese for the remaining 8 minutes. I do put a little bit of cheese on after the sauce (to help "glue" the toppings), but the majority goes on after the 12 minute mark. I've found that the cheese cooks faster than the dough does and it will come out nearly perfect by doing this...
